Finely (not paper thin) slice as many cucs as desired and then layer them with sprinklings of salt in between the layers. Leave for an hour or so and then squeeze out all the juice (better to do this part
before mucking out stalls
) Put in a bowl and add one finely chopped onion and to this add vinegar and oil (more vinegar than oil) and sprinkle with a little salt and pepper and several good squirts of MAGGI seasoning (it's similar to soy sauce but has a different flavor to it). Mix well and is so good. Always great as a refreshing side dish to any meal. Can do the same with tomatoes (only you eliminate the salting and squeezing step) One of our favorites!
