Pineapple-orange chicken
  • I made this up last night with things I had on hand and it is very tasty and has a good, generous sauce to go along with it. 

    Saute about 1-2 lbs. of chicken, in bite-size pieces along with a large chopped onion. 
    Add 2 16 oz. cans pineapple chunks with the juice, 
    1 small can drained bamboo shoots, 
    1 16 oz. can drained mandarin oranges.
    Add 1 heaping teaspoon minced garlic, 
    1/2 tsp. ginger,
    1/2 cup soy sauce, 
    1/2 cup sweet chili sauce and 
    2 tablespoons brown sugar. 
    Heat until simmering, 
    then add about 2 tablespoons corn starch mixed in 1/2 cup cold water and cook until thickened.
     Serve over rice or noodles.

  • Sounds great! I bought some sprouted rice/ Quinoa mix. I'll bet it would be good over that.
