Made this last night and it was really good! 
 
1 1/2 lbs. flank steak
2 zucchini, sliced 1/4" thick
2 bell peppers, washed, whole
avocado, sliced
salad greens
Salad dressing or chimichurri sauce
 
Spray steak and zucchini with olive oil, sprinkle with salt and pepper.
Grill steak to medium rare, let sit, covered with foil for 5 min. to rest.
Grill zucchini and bell peppers until tender.  Cut zucchini into bite-sized pieces.  Seed and slice the peppers.
Put salad on plates and top with  steak and veggies.  Drizzle with dressing, serve with garlic bread.
