Was craving these so hopped around on one crutch in the kitchen the other day and made these heavenly brownies.  They are really easy to make and I think you could just substitute regular flour for the almond meal and rice flour.  My friends who tried them said they can't tell the difference so, if you know of anyone who has to eat gluten-free, here's a perfect recipe for you!
 
5 oz. dark chocolate (I used semi-sweet chips)
1/2 oil (I used coconut oil)
1 cup sugar
1/2 cup almond meal
1/4 cup rice flour
1/2 tsp. salt
1/4 tsp. baking soda
2 organic eggs or 1/2 cup egg whites, beaten
1 tbsp. vanilla
 
Optional-nuts, chocolate chips, flaked coconut
 
preheat oven to 350 degrees, line an 8X8 pan with foil and spray with cooking spray.
 
Melt the chocolate and oil together, set aside.
Whisk together the sugar, almond meal, rice flour, salt and baking soda.  Make a well in the center and add the eggs, vanilla and chocolate mixture.  Stir until batter thickens and becomes smooth and glossy.  Spread batter into pan.  Bake 32-35 minutes, top will crack some.  Enjoy!
