2 cups flour, 2 Tbsp ground flaxmeal, 1/2 cup sugar, 2 tsp. baking powder, 1/2 tsp. baking soda, 1 tsp. pumpkin pie spice, 4 Tbsp. butter, 2 large eggs, 1/2 cup yogurt, 1/2 cup pumpkin puree, 1/2 cup fresh or dried cranberries (I used Craisins), 1/4 cup chopped nuts
Preheat oven to 400 degrees. Whisk together dry ingredients in a large bowl. Cut in the butter with a pastry blender or 2 knives. Mix the eggs, yogurt and pumpkin in a bowl, then add to the dry ingredients and stir until well mixed. Add cranberries and nuts. Shape into single serving balls (about 3 Tbsp of dough) and bake for about 8-11 minutes. Serve with whipped cream and jam. Hot tea is great too!
