Made this to go w/ parmesan chicken tonight and it is really good!  Very flavorful, neat textures and unique, even my kid who does not eat rice liked the flavor.
 
1 cup white rice                            2 cups chicken broth
2 tbsp. butter                                2 tbsp. fresh lemon juice
1 tbsp. pesto                                2 tsp. fresh lemon zest/peel
1/2 cup parmesan cheese            salt/pepper to taste
7 tbsp. chopped green onions        1/4 cup chopped pistachios
 
In a saucepan, combine rice, broth, butter, lemon juice, pesto, lemon zest, salt and pepper and bring to a boil.  Stir and reduce heat to a simmer for about 15 min., covered.  Stir in cheese, onions and pistachios.  Enjoy!
