Can't eat these anymore but they are the best!  Wonderful w/ a salad or soup or for breakfast w/ honey or jam!
 
1/4 butter or margerine, softened                1 cup brown sugar
1 cup milk                                                    1/4 cup plain yogurt (I've used honey or lemon-flavored too)
l large egg                                                    1/2 tsp vanilla
2 cups whole wheat flour                                1 tsp. baking soda
1 cup pecans (optional)
 
Cream butter and sugar, add milk, yogurt, egg and vanilla and beat until just blended.  Add remaining ingredients.  Spoon batter into 12 muffin cups.  Bake at 425 for about 15 minutes.  Enjoy!
