Was gonna make enchiladas for our Pony Club meeting last night but it was so warm yesterday I decided on a salad instead and just sorta picked ingredients as I wandered through the store.  Turned out yummy!
 
-Enough salad greens to feed your group (I like the spring mix, baby greens w/ some regular iceberg/romaine mixed in)
-Broccoli slaw mix (broccoli, cabbage, carrot mix)
-Sugar peas
-sliced cucumbers
-1 can bamboo shoots
-sliced almonds
-mandarin oranges (drained)
-sliced celery
-chow mein/won ton noodles or crushed ramen noodles(optional, skip if you are gluten intolerant)
-cooked, diced chicken cubes
-bottled Asian dressing(check ingredients for soy sauce and skip if gluten intolerant-look for a sesame oil based dressing instead)
 
I put all the ingredients in bowls and let everyone put on what they prefer.  Enjoy!
