I would put her in a round pen, and let her come up to you when she is being nice, but at the first sign of aggression, send her out and make her move and keep moving until she will come up nicely again. Just let her know that she will be made to work when she is bad. Use your body and a stock whip as an extention of your arm.
If you have to hit a horse to correct the bitting, come up under their chin, that way they don't see it coming and get head shy. I use an open safety pin concealed in my hand and when a horse tries to bite my hand, it runs it's nose into the pin. They soon learn that "Mom bites back!"
