Potato Zucchini Skillet Pancakes w/ cherry tomato salad
3 cups shredded and peeled potatoes
2 cups shredded zucchini
1 cup shredded onion
1/2 cup egg substitute
1/4 cup matzo meal or crumbs
1/4 tsp salt, dash of pepper
4 tsp. oil
Squeeze excess liquid out of potatoes, zucchini and onions, then combine with the remaining ingredients except the oil.
Heat tsp of oil in a nonstick pan or griddle. Spoon about 1 cup of mixture onto hot pan and spread to about 6 " diameter. Cook 3 minutes on each side. Keep warm and repeat w/ remaining mixture.
Top w/ 3 cups quartered cherry tomatoes mixed w/ 2 tbsp chopped olives, 2 tbsp. fresh parsley, 1 tsp olive oil, salt and pepper to taste.
