Cousin in for dinner of Shrimp Picatta over roasted broccoli.
Breakfast will be biscuits with sausage and gravy.
I make this often and it is very rich.
Ricotta mousse
15 ounces of Ricotta.
6 ounces of semisweet chocolate chips
1 cup heavy cream whipped (optional)
Place ricotta in a microwave safe bowl.
Microwave on high stirring every 15 seconds until no longer cold about 1 minute.
Transfer to a food processor and puree until smooth.
Place the chocolate chips in a microwave safe bowl and microwave on high, stirring every 15 seconds until melted about 1 minute.
Add the warm chocolate to the food processor and puree until fully incorporated and very smooth.
Pour into small ramekins and chill. Serve topped with whipped cream.
